I would only like to use a hotel's internet if its security is top notch.

How can you tell if a hotel (or other public access) internet has "top notch" or any other kind of security?

Your best bet is to use a VPN and even configure your DNS to go through the VPN. That way anyone intercepting your data from the hotel's network will just see random data and not even the websites you are looking at.

Many VPN configurations leave the DNS lookups to be performed on the local network. That means if you bank with Bank of American, though an interceptor may not know any of the details, they could know you were accessing Bank of America's website.

By configuring your DNS to go through the VPN that would also be hidden from them. The cost is just a slight delay in the DNS lookups.

Of course you want to use a trusted VPN supplier, or have it configured via your home or office.

I would also recommend using a VPN that does not leave any trace that you are running a VPN, ie: uses an obscure protocol.

Also take along a simple router... use that between the hotel network and your PC. That will keep arbitrary incoming traffic from hitting your PC too.
